Throwback Thursday: Girls Weekend in the Great State

Unless your a resident of the Lone Star State, I have a inkling you’ve not. Fun Fact! Fredericksburg is the 5th largest wine producer in the US! Cheers y’all!

Last weekend Aunt Tina and I surprised Mom with {another} 60th Birthday Celebration! She knew she was heading to the GREAT STATE with two of her favorite people, but little did she know all the surprises we had in store!

We told her to pack her bags- we were heading to Texas! Friday morning we were wheels up for Texas, flying from Atlanta to San Antonio. We picked up our rental car and I played Uber driver for our 57 mile commute to our VRBO rental in Kerrville. (About 25 minutes from downtown Fredericksburg.) Mom just couldn’t wrap her head around WHY we had to rent a house if it was just the three of us. Even though we told her it was cheaper than staying in town and probably a lot nicer than the local Holiday Express Motel.

This home was stunning y’all and Erin, the owner, was fantastic to work with. The house was updated and the views were spectacular- the rolling Texas hills made us feel like we were up in the hills of Hollywood. The Master Bathroom had a walk-in shower with three, yes THREE, shower heads! Don’t get me started on the backyard with the fire pit, outdoor kitchen and  infinity pool- absolutely breathtaking y’all! Highly recommend this property if you’re heading to Fredericksburg for any occasion! Wish we could have spent more time there!

The real reason we needed a larger house? It was not going to be just the three of us spending the weekend together hopping around tasting wine. We were spending the weekend with a few of our favorite Texas women- sorority sisters, family, friends from fifth grade and friends that are like family! SURPRISE TG!

Friday Night was spent with guests arriving sporadically surprising Mom. Catching up, laughing like school girls and of course cheers-ing to our Birthday Girl!

Saturday we got up bright and early to hit the Texas Wine Trail! We used The 290 Wine Shuttle Company, which was fantastic! They charter guests around to 13 local wineries for a very reasonable fee. It was so nice not having to worry about calling an Uber or having a one of the girls miss the fun and play Designated Driver.

We started at Barons Creek for a quick tasting of five or six varieties.

They have a huge tasting room, complete with multiple private rooms, a lovely back garden space and gift shop. The Viognier was one of our favorites from the tasting- it has ripe apricot and delicate lemon zest flavors combination in this delicious Texas Viognier. This wine has a long, creamy finish. It’s a fantastic companion for shrimp or lobster with butter sauce.

Mom also really enjoyed their Muscat Canelli, a deliciously sweet and balanced wine bursting with flavors of peach, honeydew and a hint of grapefruit. It is a perfect aperitif on a warm day but you can also pair it with fruit salad or Thai cuisine. That has her name all over it!

From Barons Creek we had a short wait for the 290 Bus and headed to Grape Creek: The Tuscany of the South.

Grape Creek is a local favorite. The property was beautiful! You really did feel like you were in Tuscany! The tasting area was VERY crowded and on weekends they do limit the number of guests per tasting groups. This vineyard was highly recommend, so we broke into small groups for tasting prior to our arrival. Our tasting experience was ok. Our guide was not full of that Southern Texas hospitality until I decide to sign up for their Wine Club. We had to wait over an over an our for a tasting, their restaurant was packed and the check-in station seemed a little frazzled and not able to give us real information the wait time, availability, etc. I wish the customer service experience as a little different because the wine was quite good. We ended up finding a spot to sit and share a bottle and a stunningly delicious charcuterie board together before heading to our final stop of the day.

Our third winery was Fat Ass.

Our favorite for the atmosphere! {With a name like Fat Ass, how could it not?}  It was such fun y’all! Very laid back, low key environment with a live band. So, so much fun! Their wine supply was down when we were there, but they make a wine slushy that went down way too easily! A perfect drink for Summer days. Definitely plan to stop by Fat Ass when you head to the Texas Wine Country! We had the best time!

Throwback Thursday: Not even newlyweds take on New York

Are we just dating? Are we “together”? Did Adam or I know each other’s middle names, favorite colors or board games as a child? All questions we might not of known the answers to when we took our first BIG trip together.

As Adam and I prepare to take-off on our next adventure to the BIG APPLE I couldn’t think of a better way to celebrate than a Throwback Thursday post about our first trip together.

We began dating in 2012… do you know our story? We were set up on a blind date by a coworker of Adam’s and the Mother of the family I was nannying for at the time. Long story short-ish….Adrienne spent months trying to set us up. We finally gave in and I, yes you read that correctly, I (Holly) got the nerve to call him on fall football Saturday afternoon. {After a TCU victory of course!}

We spent a couple of weeks texting regularly, chatting daily and agreed to not look each other up on Social Media or send photos of one another.  If/when we decided to meet it would truly be a “blind date.” We tackled all the touchy subjects before our first date. Yes…kids, religion, politics…we covered it all.

Two weeks after our first date was Christmas and my birthday…poor Adam.

As a {one time only} joint gift he surprised me with a trip to NYC and so comes our Throwback Thursday post!

We flew into LGA on a brisk January 4th afternoon.

As this was Adam’s first time to the Big Apple I played the part of tour guide. Our hotel was just a few blocks from Times Square. Shortly after landing and settling into out hotel we put on our walking shoes and started acting like tourists! We saw the lights of Times Square, the Toys R Us, Hershey and Lego Store. Strolled by Radio City Music Hall, the Rockefeller Ice Rink and Christmas Tree, where we took our first photo together after Adam got conned into buying a FDNY Beanie from a street vendor. {That’s a story for another post.}

That night Adam took me to see The Newsies on Broadway…it was fantastic! His first Broadway show was a success! {Little did he know how much I love the theater and how many times he would be going to the Fox Theatre from there on out.} If you get a chance to see it live, do it! If not, watch the movie!

Our second day in the city was spent roaming around like locals. Trying hole-in-the-wall restaurants, getting off the train on random spots, and doing a little shopping.

That night we grabbed some Starbucks and went on a Horse-and-Carriage ride through Central Park. Not to get all mushy, but it was oh-so romantic.

Our final day in the city was spent strolling through Central Park where I snapped one of my favorite photos of us. Until today, Adam didn’t know this photo existed. New York may not be known as “The City of Love,” but it will always be that to me. A magical city where my heart made room for Adam and a true love began to develop…oh lordy! Who am I being all sappy?

Monday’s Menu: Chinese Take Out at Home

Why order Chinese Take Out when you can make it at home, right?

Well, lets just say, this was not one of my finest ideas….great intension, not so great turnout. I thought it would be so fun to surprise Adam with a Movie and Take Out Night at Home Friday night. After a little Pinterest searching I found what I was going to make, Baked Sweet and Sour Chicken, Pork Potstickers and Cauliflower Fried Rice.

I ran to the grocery store, picked up the ingredients I needed and a few Redbox Rentals and was ready for date night! I got in the kitchen about 3pm to start prepping….(How do I remember this? My favorite Trashy Soap-opera, Young & The Restless was on!)

I started with the Cauliflower Fried Rice: I followed the Iowa Girl Eats recipe to a T, starting with hand grading all of the cauliflower because Adam and I do not have a food processors. Lord help me- it took forever! I’ve had friends that have tried it before (not sure it was this exact recipe) and said it was too bland. I thought the flavor was great, but the texture was a little, mushy. Not my cup of tea. I definitely do not plan on conquering this technic again, especially without a Food Processor. (Hint Hint @Helihubby)

Fried Rice

On to the Pot Stickers…I mixed together all the ingredients indicated in the recipe and placed a small amount of the mixture in the wonton wrappers (these are located in the produce department with all of the Tofu by the way).

I set aside about 8 potstickers and froze the rest for another time. I set the 8 aside for us to cook right before Adam got home.

The Baked Sweet and Sour Chicken was by far my favorite part of this experiment. Check out the recipe it is pretty easy too. It was fairly easy to make and tasted great! It was actually BETTER the next day!

When Adam arrived the coffee table was set, our movie, The Gambler was in the DVD player,  and the wine was chilled. The beeper was buzzing to take the Chicken out of the oven and I had oil heating to give the Potstickers a quick fry.

Well thankfully Adam arrived when he did…after 3 hours of cooking I was about to have a Meal Making Breakdown. The outsides of the potstickers were cooking incredibly too fast for the insides. I don’t know what Adam did exactly, but he must have seen terror all over my face when he walked in and immediately took over and they were perfect!

*Note to self: I have recently learned its a good idea to do a quick fry to each side of the Potsticker and then steam them in a shallow bath to finish cooking the inside. Not that I plan to ever make this again its a good idea just in case.

A great wine to pair with this dish is one of my favorites! Pacific Rim Late Harvest Riesling is crisp and oh so tasty!
