Monday’s Menu: Whole30, Whole lot of love, Whole new experience

Happy Monday!

Whats for supper tonight? In our last post we made references to BIG changes in our lives this year. One BIG change that we have fully embraced is a Whole30 lifestyle. Adam and I began our Whole30 Journey January 1, 2017 and have pretty much stuck with it all year. (With a few cheats over the Summer and a cocktail here and there.) Whole30

What’s the Whole30? Well I am not a professional, so I suggested you start with their website to learn more and if you’re inclined order the books…yes, trust me you need both! Whole30 is basically clean eating for 30 days.

No Sugar.

No alcohol.

No dairy….the list goes on, but remember it is ONLY for 30 days! You can do anything for 30 days, right? It’s up to you how long you want to continue.

I can not fully express how much we love the program and what an impact it has made on our lives. Yes, we did it to lose weight, but it is SO MUCH more than that. It’s how much better we feel over all and how my body craves, literally craves real, healthy foods. {Think Veggies} Clearly I am passionate about it and truly, truly love how much it has changed our lifestyle and relationship with food.

So, what’s for supper tonight?

Banh Mi Bowls with Slow Cooker Crispy Pulled Pork: @Whole30recipes 


I wish I could take credit for creating this deliciousness, but I can’t. If you decide to go WHOLE30, log onto Instagram and follow their @Whole30Recipes. You’re mouth will be watering for yummy, healthy, foods!


  • 1 Tbsp EVOO
  • 5+ Garlic Cloves, minced (I love garlic)
  • 1/4 C died white onion
  • 3 Cups #Whole30 Canned Tomato Sauce
  • 3/4 Cup Orange Juice
  • 1 Lime, juice
  • 2 Dried Ancho Chiles, rehydrated and chopped
  • 3 tsp Ground Cumin
  • One, 3lbs Boneless Pork Shoulder, trimmed

With slow cooker on high, add oil to pot. Add everything but the pork. Mix well and let it heat up, 5 min. Cut pork into three pieces and snuggle in the pot, using a spoon to cover with sauce. Cook on medium with lid until the pork falls apart easily, 6 to 8 hrs. Take out meat, shred with forks, then keep in an airtight container with some sauce until ready to eat. For crispy pork, lay the shredded meat in an even layer on a rimmed baking pan and place under broiler for 3 minutes.


  • 1/2 English cucumber, cut into sticks
  • 1/2 carrot, washed & ends cut off
  • 1/2 cup, shredded cabbage
  • 2 cups prepared cauli rice
  • 1/4 cup lime juice
  • 2 Tbsp minced cilantro
  • 2 Tbsp ribboned mint
  • 2 Tbsp unseasoned rice wine vinegar
  • 2 Tbsp RED PEPPER HOT SAUCE (Watch next week’s post for this recipe!)
  • 2 Tbsp #Whole30 Avocado Mayo
  • 1 cup PULLED PORK
  • Optional: shredded cabbage, radish, DIY pickled veg

Cut the cucumber in half lengthwise & use a spoon to remove the seedy center. Cut into smaller sticks. Cut carrot into small sticks. Then, right in your lunch container, mix the cauli rice with lime juice, herbs, and vinegar. Add the cucumbers and carrots. In a small container, mix the hot sauce and mayo. Pack up the pork. Assemble when ready to eat!
