Wednesday with Walt: Eating Around Epcot

Hello Epcot International Food and Wine Festival 2018!

Yay! It is here y’all…well it actually started last week, but TODAY was my first time visiting the festival this year.

I started the day at a VIP Pass Holder Playtime in Toy Story Land at Hollywood Studios. Ahhh-MAAAAZE-ING y’all! Don’t worry, I will be sharing all the details from one of the best Disney days I’ve ever had soon, but for now we are talking all about Food & Wine!

After riding all the rides at Hollywood Studios it was time for me to Park Hop! Frozen Ever After had a 20 minute wait, so I figured I’d make my way over to Epcot. Since today was my first time visiting the Park during this year’s Food & Wine Festival, I immediately headed over to the Festival Center to get my Annual Pass Holder Magnet.

Coincidence or perfect timing? I just happened to get to Epcot in time for lunch! Eating my way around the world it is! There are SO many choices y’all and I want to try them all!

I started my way around the World Showcase scoping out the various menus and Japan’ Teriyaki Chicken Bun sounded too good to pass up!

Oh my heavens y’all! The Teriyaki Chicken Bun was delicious! It’s a steamed bun filled with Chicken, Veggies and a Sweet Teriyaki Sauce. It is the perfect tasting portion and full of flavor. I highly recommend and would definitely consider getting it again during this year’s festival.

From Japan I continued on my journey around the World Showcase and stopped in the Good Ole’ US of A. Hops and Barley had one of my favorite eats at last year’s Festival. Naturally, I just had to have the New England Lobster Roll again this year!

So, so, so tasty! A griddled bun topped with warm lobster meat and a Fresh Herb Mayo. It literally melts in your mouth y’all. Its all delicious, but I LOVE the griddle bun. It is a perfect sized bite, although I wouldn’t complain if they made it bigger!

I am heading back to the Festival tomorrow for another VIP Event and looking forward to trying a few more dishes. Have you visited the festival this year? What are some of your favorite, MUST TRY dishes? I’d love to hear your recommendations!

Throwback Thursday: 2017 Epcot International Food & Wine Festival Favorites

It’s here! Epcot’s International Food and Wine Festival begins today! I love the different festivals at Epcot for various reasons, but Food & Wine will always be a favorite. The park offers food and drink tastings, speciality paring classes, cooking classes and meet and greets with famous Chefs, concerts, and so much more during the festival!

So…why do I love this festival so much? Have you seen the concert line-up? The Eat To The Beat Concert series offers something for everyone and their taste of music. But, y’all lets be honest….HANSON is a fan favorite that comes to the Festival annually and my inner 13 year old LOVES it! Helihubby not so much.

Since it starts today we figured sharing some of our favorite finds of 2017 would be a fun way to celebrate Throwback Thursday and the kick-off of the 2018 festival! Join us as we eat and drink around the world!

Epcot is one of three Walt Disney World Parks that guests can walk around the park with an adult beverage in hand. {This might be the main reason it’s the favorite park for us Newly Newlyweds.} Grab a cocktail and make your way eating and drinking around the world, exploring different countries, their rides and little hidden gems! During the Food and Wine Festival, Epcot adds additional countries and speciality spots throughout the park for guests to have even more dining options. What a great opportunity for people to taste samplings of dishes that may night otherwise have a chance to try!

It’s not on our Whole30 plan (which we are trying to stick to since we are running the Food & Wine 10k in November) but we will be trying the Belgian Waffle with Warm Chocolate Ganache and Whipped Cream from Belgium, Le Cellier’s Wild Mushroom Beef Filet Mignon with Truffle-Butter Sauce from Canada and Florida Beer Company Passport Triple Chocolate Milk Stout from Cape Canaveral, FL from Craft Drafts. YUMMM!

Wednesdays With Walt: ZTA does Disney

Two of my favorite things in one place; my sorority, Zeta Tau Alpha and Disney. Oh be still my heart. I can’t help but do a little happy dance. IMG_0829.JPG

It’s a Way Back Wednesday with Walt- join me as I reminisce on my latest Walt Disney World trip with two of my ZTA Sisters during our National Conference in Orlando this July. IMG_0991.JPG

The three of us girls were like kids in a candy store as we arrived at the Magic Kingdom for the Rope Drop and our day at the Happiest Place On Earth. It had been years for both AM and EB since they had last been to Magic Kingdom. The girls used their favorite Key To The World Travel Planner for their One-Day Base Park Ticket and at our 30 day countdown mark I had our Fast Passes booked for three of the park’s busiest rides: Peter Pan’s Flight, Space Mountain and Big Thunder Mountain Railroad.

On our todo list? EVERYTHING, but first we were off to get Mickey Ears and meet the main mouse himself! PicTapGo-Image-8.jpg

We rode almost every ride in Magic Kingdom and sampled (almost) every Instagramable snack. Dole Whips, check! Hey, it’s fruit! It makes a for a healthy Disney Breakfast, right? IMG_1031.JPG

It wouldn’t be a TOY STORY LAND Grand Opening celebration without Toy Story Cookie-dough Pops before boarding our rocket ship and taking off with Buzz to fight the evil Emperor Zurg! IMG_0854.JPG

I am sure you know, Orlando is brutally hot in July. To help us break up the day and refresh a bit, since we were “rope dropping and never stopping,” I got us lunch reservations at Jungle Navigation Skipper Canteen. It is a must for a long day at Magic Kingdom and my FAVORITE in the park restaurant. We shared the S.E.A. Shu Mai, Orinoco Ida’s Cachapas, Perkins Thai Noodles (my favorite- they are spicy), and Falls Family Falafel. We also tried, but is not pictured, “Tastes like Chicken” Because it is!

Before we knew it, our day at the Magic Kingdom was quickly coming to an end. PicTapGo-Image-10.jpg

After lunch we took in a few more rides, danced to the Move-it-Shake-it Parade down Main Street U.S.A. and made sure to see the Happily Ever After Fireworks before making our way back to the Transportation and Ticket Center and head home.

Tuesday Travels: Borgo Argenina

Welcome to Borgo Argenina, a truly magical stone estate in the hills of Chianti. IMG_2414.JPGIMG_2419.JPG

Visiting Borgo Argentina was an experience like no other and my absolute favorite part of our Newly Newlywed Italian Adventure. The 998 AD Peasant Farmer home had been abandoned for years when, now owner, Elena Nappa, discovered the property while on a holiday from Milan. A former fashion designer, Elena quickly fell in love with the estate. She knew in her heart it was a calling for her to restore the hamlet into a stunning seven room Bed & Breakfast and that is exactly what she did. Her story of how she transformed this property without electricity and running water into a fully functioning Bed and Breakfast is really remarkable. IMG_2416.JPG

Adam and I drove from Florence to the Chianti hamlet. Passing thousands of grape vines and olive trees, around curvy bends, narrowingly escaping head on collisions with Italian drivers and through the rolling hills to get to Elena’s. Upon arrival at Borgo Argenina we were greeted by Elena’s four-legged friends, Giuseppina and Pasqualina along with other guests who were sitting on the grand stone patio, enjoying a glass of vino taking in the sunset over Chianti. IMG_2420.JPG

“Welcome! You must be new! Elena is upstairs in the Kitchen.” one guest said. Instantly we were family.

Our journey at Borgo Argenina began as we passed the bell to ring for Elena if you arrive after hours and opened the original wooden double doors adorned with iron locks and handles. IMG_2415.JPG

Once inside the main house, up the narrow stone stairway with one tiny window over looking the garden, we found Elena, tooting around her kitchen. IMG_2433.JPG

“Ah! Bella! Benvenuto! I’ve been expecting you! Fett, si?” Elena asked.

She grabbed the keys and escorted us to the Piccola Suite, our home for the next four days. We had a quaint sitting room adjacent to our bedroom, an attached private bath and views of the rolling Chianti Hills and Elena’s garden. PicTapGo-Image-5.jpg

Each room is equip with a mini bar and tea kettle that is refreshed daily, wifi and a hairdryer. (Yay! One less thing to pack!) There is no air conditioning at Borgo Argenina, thankfully, even during the Summer months the nights were cool and a flowing breeze filled our room. After a tour of our suite and parts of the property we sat down with Elena on the stone patio outside. She shared some of her favorite places in Tuscany with us over a glass of wine. PicTapGo-Image.jpg

We chatted for what felt like hours of friends catching up before we realized the time and that we were late for a supper reservation she made for us at Giorgio’s. We will share that experience with y’all a little later. Delizioso!

Every morning, Borgo Argenina guests are greeting to a beautiful breakfast spread prepared by two of Elena’s three employees. Elena also invites her guests to a nightly Cooking Class at Borgo Argenina. If you’re staying with her, this is a MUST! It was by far the best food we had during our time in Italy and if she had extra room we would have taken the class a second time! Each guest is gifted with her Borgo Argenina Cookbook-filled with Elena’s family recipes and traditional Italian dishes. The time we spent in the kitchen with Elena and other guests was a highlight of our trip. Pop over next Monday to see what was on our Menu! IMG_1196.JPG

Y’all, I really can not express how much HeliHubby and I enjoyed our time at Borgo Argenina. It is in a perfect location to be a “home base” for Montepulciano, Volterra, Siena and more little Tuscan Wine towns. It’s truly an enchanting, one of a kind Italian escape. Elena is absolutely wonderful. She is warm, welcoming and lovely. We felt like we had known her for years and yet we just met. Leaving we all three got a bit teary eyed as we said our “goodbyes.” I don’t know when the Newly Newlyweds will get to return to Chianti to visit Elena, but I do know HeliHubby and I both left a piece of our hearts in Tuscany at Borgo Argenina. It is just magical.

Wednesdays with Walt in Italy.

If you didn’t see our Tuesday Travels post, you missed out! We started the story telling journey of our recent Newly Newlywed trip to Italy. Over the next few days and weeks we’re going to share all the details from our two week trip across the pond. IMG_1518.JPG

We’ve got the perfect post for a Wednesday with Walt. If you’ve been following us for any link of time, you’ve caught on to my love for Disney. Wouldn’t you know, Disney just follows us wherever we go?

Skipping a few days into our trip from where we left off, while in Florence HeliHubby just happened to find me a Disney Euro Store! Ah! Y’all my heart was oh-so happy! IMG_1704.JPG

No surprise to us Disney fans, the store was full of Disney Magic. Disney movie music filled the air, all in Italian of course. As soon as I opened the doors and walked in, I immediately knew I was not in the typical Disney Store. The decor was very Italian. Ceilings painted with Roman Disney Characters, paintings hung the walls featuring iconic Italian landmarks and of course hidden Mickeys everywhere!

The store had the typical Disney Merchandise: shirts, toys, stuffed animals, all the coffee cups and speciality merchandise specific to Italy. I. WANTED. IT. ALL. Y’ALL!

If you’re a Disney fan roaming the streets of Florence make sure to pop by Via dei Calzaiuoli, 69/71/R, 50123 and say hello to Mickey and the gang! The store is in the same building as Hotel Maxim. {Feel free to pick up your favorite Newly Newlyweds a surprise too!}

Tuesday Travels: Ciao Italia

A little over a month ago Adam had the grand idea for a Newly Newlywed Adventure. We began our search of where the road- or friendly skies- would take us. Originally, our plan was to return to Hawaii. IMG_1426.JPG

The Big Island and Kauai were still on our Wish List, but with the recent volcano eruption (and taking a helitour over the volcano was a “must do”) we opted to save that vacation for another time.

We spend days researching. Toyed with Iceland, Africa and Australia. It wasn’t until I put my Key To The World Travel Travel Planner skills to the test and happened to find a fantastic deal to Italy, we just couldn’t pass up.

So, with three weeks until take-off the planning began! Once we decided on Italy, we were both craving Italian food. Naturally, we had to have our “planning meetings” at Antico Pizza Napoletana. (AKA: The BEST pizza in Atlanta!) IMG_0394.JPG

Unlike most of our vacations, this trip was very unplanned. Besides knowing where we were staying, we had no other set plans.  [I’ll just go ahead and put it out there…Being the planner that I am, I did a really good job with being flexible. Just ask Adam.}

July 3, 2018 our bags were packed and we said arrivederci to the USA onboard a Delta PINK RIBBON Plane. IMG_1054.JPG

We flew in style- Delta One -for our first 8 hour leg of the trip to Amsterdam. Such fun cheers-ing to vacation and our time away! Our cabin mates just happened to be The Mingos and their entourage. After a 4 hour layer over in Amsterdam, a short 1.5 hour KLM flight and two landing attempts later (the Florence runway is quite small) we arrived in Italy about noon local time on July 4th. IMG_2244.JPG

We grabbed our luggage and headed to the Rental Car Center…that’s right, you read that correctly. We decided to rent a car and drive in Italy! That was an adventure in itself!

{Travel Tip: BE CAREFUL if you decide to rent a car internationally. Even though we used Enterprise and booked the car in advance, they tried to over charge us and cut our days on the rental. Thankfully Adam had copies of the agreement stored in his E-Mail and I had printed copies with me.  Slightly stressful, but we survived and so glad we ended up having a vehicle to get around. Also, keep in mind the rental car center is made up primarily of trailers all on gravel roads. It can be a bit of a work out pulling your luggage to and from your car.}

Two bags full of clothes, two over sized wine suitcases and 4 carry on bags later the Newly Newlyweds were ready to hit the road and head to our first stop, Borgo Argenina. A truly magical Bed & Breakfast we cannot wait to tell you all about!

Follow along our Italian Adventure over the next days and weeks to come. We’re so looking forward to reminiscing to our time in Italy as we share it with y’all! We can’t wait to return to the beauty of Tuscany someday.

Throwback Thursday: Girls Weekend in the Great State

Unless your a resident of the Lone Star State, I have a inkling you’ve not. Fun Fact! Fredericksburg is the 5th largest wine producer in the US! Cheers y’all!

Last weekend Aunt Tina and I surprised Mom with {another} 60th Birthday Celebration! She knew she was heading to the GREAT STATE with two of her favorite people, but little did she know all the surprises we had in store!

We told her to pack her bags- we were heading to Texas! Friday morning we were wheels up for Texas, flying from Atlanta to San Antonio. We picked up our rental car and I played Uber driver for our 57 mile commute to our VRBO rental in Kerrville. (About 25 minutes from downtown Fredericksburg.) Mom just couldn’t wrap her head around WHY we had to rent a house if it was just the three of us. Even though we told her it was cheaper than staying in town and probably a lot nicer than the local Holiday Express Motel.

This home was stunning y’all and Erin, the owner, was fantastic to work with. The house was updated and the views were spectacular- the rolling Texas hills made us feel like we were up in the hills of Hollywood. The Master Bathroom had a walk-in shower with three, yes THREE, shower heads! Don’t get me started on the backyard with the fire pit, outdoor kitchen and  infinity pool- absolutely breathtaking y’all! Highly recommend this property if you’re heading to Fredericksburg for any occasion! Wish we could have spent more time there!

The real reason we needed a larger house? It was not going to be just the three of us spending the weekend together hopping around tasting wine. We were spending the weekend with a few of our favorite Texas women- sorority sisters, family, friends from fifth grade and friends that are like family! SURPRISE TG!

Friday Night was spent with guests arriving sporadically surprising Mom. Catching up, laughing like school girls and of course cheers-ing to our Birthday Girl!

Saturday we got up bright and early to hit the Texas Wine Trail! We used The 290 Wine Shuttle Company, which was fantastic! They charter guests around to 13 local wineries for a very reasonable fee. It was so nice not having to worry about calling an Uber or having a one of the girls miss the fun and play Designated Driver.

We started at Barons Creek for a quick tasting of five or six varieties.

They have a huge tasting room, complete with multiple private rooms, a lovely back garden space and gift shop. The Viognier was one of our favorites from the tasting- it has ripe apricot and delicate lemon zest flavors combination in this delicious Texas Viognier. This wine has a long, creamy finish. It’s a fantastic companion for shrimp or lobster with butter sauce.

Mom also really enjoyed their Muscat Canelli, a deliciously sweet and balanced wine bursting with flavors of peach, honeydew and a hint of grapefruit. It is a perfect aperitif on a warm day but you can also pair it with fruit salad or Thai cuisine. That has her name all over it!

From Barons Creek we had a short wait for the 290 Bus and headed to Grape Creek: The Tuscany of the South.

Grape Creek is a local favorite. The property was beautiful! You really did feel like you were in Tuscany! The tasting area was VERY crowded and on weekends they do limit the number of guests per tasting groups. This vineyard was highly recommend, so we broke into small groups for tasting prior to our arrival. Our tasting experience was ok. Our guide was not full of that Southern Texas hospitality until I decide to sign up for their Wine Club. We had to wait over an over an our for a tasting, their restaurant was packed and the check-in station seemed a little frazzled and not able to give us real information the wait time, availability, etc. I wish the customer service experience as a little different because the wine was quite good. We ended up finding a spot to sit and share a bottle and a stunningly delicious charcuterie board together before heading to our final stop of the day.

Our third winery was Fat Ass.

Our favorite for the atmosphere! {With a name like Fat Ass, how could it not?}  It was such fun y’all! Very laid back, low key environment with a live band. So, so much fun! Their wine supply was down when we were there, but they make a wine slushy that went down way too easily! A perfect drink for Summer days. Definitely plan to stop by Fat Ass when you head to the Texas Wine Country! We had the best time!

Monday’s Memory Maker: A Key To Our World

If you know HeliHubby and I through our blog or in real life, you have probably caught on to a few things about us.

We love to travel.

I have a {healthy} love for Disney, that Adam is slowly starting to appreciate.

If I was a betting lady (and I am) I’d bet in 2018, Adam and I have spent more nights in a hotel than in our own home. You tell us when and where and  bags are packed and we’re out the door! Traveling has always been a big part of our relationship. While we were on our first date we traveled to the Georgia/Alabama boarder, just so we could say we crossed the state line, knowing it would make for a good story later down the road. We took our first trip together to New York City after only knowing each other for three weeks.  Adam works in aviation, I used to be a flight attendant, we got engaged in a helicopter, arrived at our Wedding reception in the same one and y’all know we just added, “Elsa,” our 1967 Cessna 182 to our family.

Part of the traveling aspect I love the most is the planning. Researching the cities we’re visiting, finding the local favorites, best restaurants and things to see. I do it all! I’ve always been an organizer and planner. From planning Sorority functions to being hired for private event planning jobs, vacations for Adam and I or for family and friends. I am always planning. Don’t get me wrong, not ALL things are planned. We are semi-spontainous when we travel and in daily life. We do however, try our best to maximize our time while on vacation and planning correctly is a big part of that.

Since October I have gone to Disney World at least once a month. (The benefits of living within driving distance and having an Annual Pass.) Mickey’s Not So Scary Halloween Party in October, a “just because” visit in November, Mickey’s Very Merry Christmas Party with the family in December, another “just because trip” in January, ran the Walt Disney World Princess 10k in February, and in March for Spring Break and Spring Training. Now some call this a little extreme or even an obsession- ha! I like to think of it as a more enjoyable way to get in my daily steps. It doesn’t matter your reasoning for going or how old you are, Disney is always magical. From the moment you walk through the front gates, hear the music playing in the background and the smells of popcorn and cotton candy fill the air, you can’t help but get butterflies of excitement.

Friends and family heading to Disney always reach out asking for help in planning their Disney Trip- Where should they stay? What fast passes should they get? What’s the best character dining? I get giddy with excitement for them and all the fun I know they will have at Walt Disney World. I love having the opportunity to help them plan their magical adventure.

So……after countless friends and family suggesting, years of researching and thinking it over I’m taking the plunge and becoming a TRAVEL PLANNER with Key To The World Travel!

Is this a dream? I have found a career path that ties all of my favorite things together, traveling, planning and Disney. I could not be more excited! So while I am going to be specializing in Disney Destinations, I can plan any vacation for you! Cruises, All-Inclusvies, excursions, you name it, I can plan it!

Tuesday Travels: Doing Disney {Tasting Around The World}

Hey there Musketeers!

Are you dreaming of Disney on this Travel Tuesday? We just returned from a quick weekend trip. I too, am wishing we were walking our way around Epcot. Sipping on seasonal cocktails and enjoying the fantastic March weather during the Flower and Garden Festival!

Come on! Take the stroll around Epcot with us! It’s not just for kids- adults can love Disney too!

We arrived at Epcot via boat from the Swan & Dolphin Hotel. Did you know you can do that? We went through the back entrace by the International Gateway. It was there we made a quick right to cross the bridge into France, where our day Tasting Around The World began!RenderedImage.jpeg

Our first stop was at Les Vins des Chefs de France for a little cocktail! We cheersed to our Day of Disney with a glass of Champagne and Adam had a French Beer similar to a Blue Moon. IMG_8012.jpeg

Also in France is Les Halles Boulangerie-Patisserie, where we had a yummy French Duo-  a White and Dark Chocolate Mousse Cake. SO good y’all! It just melted in your mouth. The Mousse was so creamy- clearly this was not a Whole30 Day! IMG_8020.jpeg

Did you know you could travel 1,200 miles in just three minutes? You can! At Epcot anyway! From France we made our way to Morocco where Adam had his second beverage, a Casa Beer, an original Lager from the host country.  IMG_8045.jpeg

After Morocco we made our way to Japan where Adam and I shared a Sapporno Beer from Kabuki CafeIMG_8061.jpegIMG_8059.jpeg

We passed through the American Adventure (we can have a Bud Lite anytime y’all) to Italy for another glass of Bubbly! IMG_8064.jpeg

Next, we headed to Biergarten Restaurant in Germany where Adam took in the, ehh, local fashion culture and even found himself an Epcot souvenir! IMG_8070.jpeg

I think a Margarita is calling my name! Is it for you too? Mexico was next where we had Cucumber Lime Margaritas.  A mix of Tequila Avión Blanco, Fresh Cucumber, Orange Liqueur, Lime Juice and Agave Nectar. Whew y’all! These little babies were strong! Stronger than we expected for sure! We washed down Beef Empanadas filled with Barbacoa Beef, topped with Chipotle Sauce, Crema Mexicana and Queso Fresco and served with a side of Corn Esquites with our Margaritas from Choza de MargaritaIMG_8108.jpeg

We finished our snack in Mexico and  headed North to Canada for a little beer eh! IMG_8140.jpeg

We crossed the pond for a Half & Half at the Rose & Crown Pub in England for our final beverage on our World Tour of Epcot. IMG_8152.jpeg

Well just like that we traveled thousands of miles and tasted ten new toddies in a few short hours! What’s your favorite country to visit while at Epcot? Do you have a favorite cocktail or meal you have to get while visiting? We’d love to hear about it!

Wouldn’t it be nice to be back in Orlando making our way through Epcot and the World Showcase? Who knows…with just a little Pixie Dust anything can happen! Maybe HeliHubby and I will make our return sooner than planned!

Throwback Thursday: Travels with Thelma & Louise Finale

Mom and I have traveled 12+ hours, over four and half states to the GREAT State. Up to Oklahoma and now we’re on the final leg of our Throwback Thursday Thelma & Louise Summer shenanigans!

After taking in all that Pawhuska, OK had to offer Mert, Louise and I took the road back to Tulsa for the night. For the short amount of time we spent in the city, we had a fantastic time and would love to go back! I was so surprised at all the unique shopping and little restaurants.

We spent the night at the Hard Rock Tulsa to do a little gambling! Before we tried to hit it big, we explored downtown Tulsa for supper. We found a great little Mexican/Taco spot called El Guapo’s. IMG_7517.jpeg

Y’all their Margaritas are spot on! So delicious! They have one named “The Horny Toad,” you know the three of us TCU Frog Fans just had to give it a try! IMG_7520.jpegWe had great service at the bar and the food was great! We started with stuffed jalapeños  with a homemade ranch dipping sauce. Y’all they were to-die-for! I would go back for those alone! I had some sort of semi-healthy grilled pork dish with grilled mexican corn. Ah! My mouth is watering just thinking about it! Guess we have to go back! IMG_7523.jpegIMG_7524.jpeg

Sadly, we didn’t win BIG money or any money that is at the Hard Rock Tulsa Casino, so we packed our bags and headed back to the GREAT STATE. The next day Mom and I said goodbye to our travel partner, Big Mert and hit the road for Waco.

{Ok, I know what all of our TCU friends are thinking right now. You know the only reason we would go to Waco is to 1) See TCU beat Baylor or 2) To get our DIY Fixer Upper on and check out the Magnolia Market at the Silos!}

Waco is just a few hours from the Big MP and since we were in no rush to get back to Georgia Mom and I decided to add a little adventure to our Thelma & Louise trip. We would visit Waco, maybe head to Houston to catch up with friends, maybe stay the night and eventually start our trip back to the Peach State. If you’re heading to Waco from Dallas a stop at Slovacek’s, a Czech bakery and gift shop is a MUST! They are known for their Czech kolaches. Best things ever! They are yeast-risen rounds of dough topped with fruit filling or in this case savory sausages. Is your tummy rumbling like mine right now? IMG_7573.jpeg

After stopping for a snack and a little shopping we finally made it to the Magnolia Market!!! IMG_7582.jpeg

No signs of Chip or Jo and it was packed of course! We didn’t take into consideration that it was July 4th weekend and everyone was off work- whoops! Poor planning on our part, but we had a great time anyways! We snapped a few photos, met new friends, toured the grounds, tried a few food trucks and did a little {more} shopping! IMG_7594.jpeg

Just like that we were back in car {imagine that} and on the road to Houston! No trip to the GREAT STATE would be complete without a stop at Buc-ee’s! IMG_7595.jpeg

We may or may not have planned our drive around stopping at a location or two. What’s Buc-ee’s? Think glamorized gas station. What? Is that even possible? How about, the Walmart of gas stations? Ok, ok more like the Target of gas stations.

It probably sounds ridiculous, but unless you have stopped and shopped at a Buc-ee’s you have no idea! They have it all- literally! From branded Buc-ee products that everyone loves (get the Buc-ee Beaver Nuggets- just trust me) to brands like Mud Pie and Kamado Joe, you’ll find it at Buc-ee’s, not to mention all the super cute Texas stuff!

After a stop or two at Buc-ee’s we decided to pass over Houston and head towards Georgia and stopped in Baton Rouge for the night! (TG & I both love a good hotel.) Shout out to my @helihubby for being quick on his toes and scoring us a room at the Watermark Hotel. In LOVE! It was a great location and such a trendy hotel. We got in late, ordered room service and hit the bed! IMG_7609.jpeg

Before hitting the road and rolling out of BR we did a quick swing by the Campus of LSU and the ZTA House. Of course I just had to get a picture! IMG_7655.JPG

We made a few stops along the way since we took a different route home and not our usual I-20, but opted to forgo the grand adventure to get back to Atlanta in time for the Braves July 4th Game! IMG_7642.JPG

Lordy! Are you exhausted? I am just thinking about all that driving and what a jam packed day it was! Just like that my Throwback Thursday Thelma & Louise stories have come to a close, for now anyways! It’ll be hard to top last year and all of our shenanigans, but I have no doubt whatever Mom and I get into this Summer it’ll be just as fun! I’m so lucky to have a Mom that is not only my Mom, but my best friend. We may drive each other crazy sometimes, but I wouldn’t have it any other way and I am so thankful for our summers and time we get to spend together. Love you TG!

Monday’s Menu: Whole30 Zoodle Spaghetti

Ok…ok.  I know what you are thinking. GROSS!

There is no way you can make a tasty spaghetti with zucchini noodles. I’ll admit, it doesn’t compare to the real thing and honestly, it might take a little getting used to, but with the right Whole30 Compliant Sauce and full of flavor meat it can be a delicious substitution and SUPER quick meal!

There’s no real recipe. I just sort of threw together ingredients hoping to end up with something edible. Scary, isn’t it?

You can use whatever compliant sauce and meat you prefer, this is just what I used.

Ingredients:

Trader Giotto’s Organic Spaghetti sauce with mushrooms  

Whole Foods pre-packaged Zucchini Noodles

Pederson’s Italian Ground Sausage 

In a skillet, brown sausage. You can dice some onion and add it to it for more flavor and extra veggies if you want.

While the sausage browns, heat up a small pan and warm up spaghetti sauce. Transfer sausage to strainer and drain over pepper towels and remove excess oils. In the same skillet as the sausage was cooked in, add zoodles. Cook until desired tenderness. (I like mine pretty tender) Do not add any extra oil to the pan. It will just make the zoodles watery when added to the sauce- gross!

Add meat into sauce pan and stir together.

Once everything is cooked and warm. Add zoodles to a bowl. Top with meat/sauce mixture and top with fresh basil or oregano or both if you’d like! Enjoy!

Monday’s Menu: Whole30 Bangers & Mash

Y’all this recipe is one of our absolute favorites! Adam has said multiple times he could eat it every day. It’s so delicious and left overs are even better!

We discovered the recipe during our first Whole30 from Melissa’s Whole30 book,  “The Whole30: The 30 Day Guide to Health and Food Freedom,”  and it has become a staple during (and after) our Whole30s.

You’re 29 days in! If you’ve not given it a try, tonight is the perfect night! Enjoy!

Banger Sausage Patties with Sweet Potato Mash and Caramelized Onions

For the Sausage (I like my sausage to be full of flavor and add more seasonings than the recipe calls. My notes are in parentheses.) 

1 pound ground pork
¼ teaspoon ground sage (1 teaspoon)
¼ teaspoon garlic powder (1 teaspoon)
¼ teaspoon dried thyme (1/2 teaspoon)
¼ teaspoon onion powder (3/4 teaspoon)
¹⁄8 teaspoon cayenne pepper (1/4 teaspoon)
¹⁄8 teaspoon nutmeg (1/4 teaspoon)
1 teaspoon salt
¹⁄8 teaspoon black pepper
Grated zest of 1 lemon

For the Mash

2 medium sweet potatoes, peeled and cut into large dice
4 tablespoon ghee or clarified butter
½ cup full-fat coconut milk
1 onion, thinly sliced
¼ teaspoon salt
¼ teaspoon black pepper

PREHEAT the oven to 350°F. Bring 4 cups water to a boil in a medium pot over medium-high heat. Line a baking sheet with parchment paper.

PREPARE THE SAUSAGE: In a small mixing bowl, combine all the sausage seasonings.

 

In a large mixing bowl, mix up pork and add seasonings a little at a time. {TIP: If you have plastic gloves, they are great to use while you fold in the seasonings and form the patties so your hands don’t get icky.}

Form pork mixture into (about) 8 small patties. (I typically get about 6) Place on a plate and chill in the freezer for 10 to 15 minutes while starting the sweet potato mash. (I don’t always chill my patties and they turn out just fine.

COOK the sweet potatoes in the boiling water until fork tender, 10 to 15 minutes. Drain and return the potatoes to the pot. Add 1 tablespoon of the ghee and coconut milk. Using a potato masher, immersion blender, or large kitchen fork, mash and mix the sweet potatoes with the ghee and coconut milk. (I add salat and pepper to the mash.) Cover the pot to keep warm and set aside.

REMOVE the sausage from the freezer and place on the parchment paper–lined baking sheet. Bake the sausage patties in the oven for 12 to 15 minutes, until the internal temperature reaches 145°F, and no pink remains in the middle of the patty.

MEANWHILE, heat the remaining 3 tablespoons of ghee in a large skillet over medium heat, swirling to coat the bottom of the pan. When the ghee is hot, add the onion and cook for 15 minutes, turning them periodically as they begin to brown and caramelize. (Do not rush this step—the browner the color, the more concentrated the flavor will be.)

TRANSFER the mashed sweet potatoes to the plate. Top with the pork and gently set the cartelized onions ontop of the pork. Enjoy!

This recipe can easily be doubled- I actually recommend it so you have left overs for breakfast or lunch the next day! You can also pre-mix the seasoning mixture and save in little zip-lock bags or in mason jars so you already have it ready when you’re making this dish. It will just save you a little time!

Throwback Thursday: Let’s go fly a plane!

Yep. I said it.

On Sunday, August 20, 2017 when Adam decided to go “practice flying” I said, “Yea. Sure I’ll go.”

I’m not sure who was more surprised by my answer, Adam or myself. He had only been asking me to fly with him AND his instructor for 6 months and never did I have any interests in dying. I mean flying with them! Much less going up alone with Adam just days after him getting his pilot’s license.

What in the world was I thinking? Maybe I was just being a supportive wife or crazy! I guess I’ll never know for sure, but on that warm August morning I decided to go up, up and away with my newly winged Pilot. I’ll share how we celebrated his big accomplishment in posts to come, but figured for our first Throwback Thursday of 2018 and (hopefully) days from getting our plane, it would be fun to tell our first flight story.

Adam spent weeks prepping for the exam y’all. If you know him, you know that when he has a goal, he is going to reach it and not only reach it, but do it with flying colors. He will be the best. He will do it the fastest and getting his license to fly was no exception. As thrilled as I was for him for completing his goal, it was not an easy 6 months for us. He would wake up super early. Go fly. Go to work. Stay late at work. Go night fly. Come home. Eat. Sleep. Repeat. I basically never saw the man. We had plenty of conversations about him and the “other woman” he was obsessed with for months. Plenty.

August 20th was the first day I returned home from a trip down to Orlando. (Adam shipped me off to Disney World so he could study for the exam.) As I walked in the door, he was leaving to go on his first solo flight since earning his wings. JUST LIKE THAT I said, “Ok, I’ll go too!” It was a now or never thing. If we didn’t walk out the door that very moment, there was no way I was going up anytime soon.

Next thing I know I am in the passenger seat of a little Cesnna plane watching my Pilot do his pre-flight checks and texting my bother to let him know we were about to take flight, in the event anything happened. There was no way I was telling my parents until we landed safely back on the ground.

In no time we were taking off!

Needless to say my stomach was in knots. I said about one hundred Hail Mary’s and had white knuckles during take off. (Oh, lets be honest. I had white knuckles during the entire flight and landing!)

While I was never fully comfortable during the flight thanks to my nerves, it was actually fun. Seeing the city from above is pretty amazing. We flew around North Atlanta, over Stone Mountain and Lake Lanier for about an hour. Baby steps y’all, baby steps.

I guess I should let you know Adam did a fantastic job flying! He was such a gentleman constantly checking on me, telling me what each of the knobs on the panel and exactly what their functions were. We even chatted about me, yes ME, taking a few classes just so I can learn the basics and more importantly learn how to land in the event of an emergency. We both think it will help my nerves and allow me to calm down and actually enjoy flying in our little bird.

I am still not thrilled with the idea of Adam flying and us traveling in a tiny little plane, but I am warming up to it. Adam got me my own fancy airplane headphones and the cutest miniature suitcase for weekend trips in Elsa for Christmas. It is the cutest thing ever y’all! (Watch my Instagram for a picture! You’ll love the suitcase, trust me!)

Just from writing this Throwback post, I am already getting butterflies thinking about going up again. After 4+ months of being in service, our little plane, Elsa, should be finished next week! Looks like we will soon be flying the friendly skies together and 2018 will be full of adventures!

Monday’s Menu: Whole30 Roasted Red Pepper Hot Sauce

Last week we shared one of our favorite WHOLE30 recipes, Banh Mi Bowls. This sauce is used to top the Banh Mi Bowls. It is an extra added step, but so worth it! This sauce makes the bowls!
Red Pepper Sauce- WHOLE30

ROASTED RED PEPPER HOT SAUCE
2 red bell peppers
1 to 2 dried ancho chili peppers
1/2 tsp ground cumin
2 Tbsp olive oil

Cut the bell peppers in half, remove stem and seeds. Cover a baking pan with foil & place the peppers flat-side down. Place in the oven and turn on broiler. Cook until charred, about 15 minutes. Then place peppers in a bowl and cover with the foil to steam for 15. Meanwhile, steep the dried ancho peppers in very hot water until they soften.

When cool, slip the charred skin off the peppers. Roughly chop the bell peppers & ancho, and transfer to a food processor or blender. Add olive oil and 1 Tbsp of the chili steeping liquid. Blend until smooth, adding more liquid or oil as needed.
Drizzle over the Banh Mi Bowls and enjoy!
*TIP: This recipe does make more than enough sauce for the bowls. Store some in the fridge or freeze and use later.
